    Main: Creamy Mushroom & Thyme Orzo

    300g orzo
    300g chestnut mushrooms, sliced
    2 garlic cloves
    1 small onion
    150ml white wine
    500ml vegetable stock
    100ml double cream
    2 tbsp grated parmesan
    Fresh thyme
    Olive oil
    Salt and pepper

    Optional: extra parmesan for crisp shards


    Equipment

    • Large sauté pan – a heavy based sauté pan distributes heat evenly and prevents sticking. Try this large sauté pan to cook with ease.
    • Wooden spoon
    • Ladle


    Method

    1. Sauté onion and garlic in olive oil until soft.
    2. Add mushrooms and cook until golden.
    3. Stir in orzo and toast lightly for 1 minute.
    4. Pour in wine and allow to reduce.
    5. Gradually add stock, stirring occasionally, until orzo is tender.
    6. Stir in cream, parmesan and thyme.
    7. Season well.

    For crispy parmesan shards, bake small piles of grated parmesan for 5–6 minutes until golden.
